When I was a kid my mom used to make porcupine meatballs all the time. It was an easy and inexpensive recipe that could feed her big family. I’ve been trying to turn some of my mom’s dishes into Weight Watcher friendly recipes, so I thought this would be a good one to try. This recipe is made with 99% lean ground turkey, cauliflower rice, and V8 juice. The cauliflower rice and 99% lean ground turkey are both zero points. 8 oz of V8 juice is 2 points but a serving of porcupine meatballs is 2 oz of V8 at best so I’m calling this a ZERO POINT recipe!

One of the best things about this recipe is that it is cooked in a slow cooker! That’s how my mom made hers. My new favorite slow cooker is the Pioneer Woman Blossom Jubilee! It’s so pretty! Mine is a boring white one and this one makes me want to upgrade… 😐
Another great thing about this recipe is how easy it is to put together.
Here’s what you’ll need:
- 1 lb of 99% lean ground turkey
- 1 tsp onion powder
- 10 oz bag of frozen riced cauliflower
- 1 egg
- 46 oz container of V8
- Salt and pepper to taste
Here’s what you’ll do:
- Set out the frozen cauliflower to thaw a little while you’re gathering your ingredients and setting up your slow cooker
- Combine turkey, egg, salt/pepper, onion powder and riced cauliflower
- Shape into about silver dollar sized meatballs. (One lb makes about 20 meatballs)
- Put the meatballs into the slow cooker and cover with the V8.
- Place the lid on the slow cooker and cook on low for about 6 hours
- Serve and enjoy!
I serve these with a green vegetable and cauliflower mashed potatoes. Yum!
