Porcupine Meatballs

Ingredients

  • 1 lb 99% Lean Ground Turkey
  • 1 Egg
  • 10 oz Frozen Riced Cauliflower
  • 1 tsp Onion Powder
  • 46 oz V8 Juice
  • Salt and Pepper to taste

Instructions

  • Set out the frozen cauliflower to thaw a little while you're gathering your ingredients and setting up your slow cooker.
  • Combine turkey, egg, salt/pepper, onion powder and riced cauliflower.
  • Shape into about silver dollar sized meatballs.  (One lb makes about 20 meatballs).
  • Put the meatballs into the slow cooker and cover with the V8.
  • Place the lid on the slow cooker and cook on low for about 6 hours.
  • Serve and enjoy!
