Arizona Burrito Bowls

I am a huge fan of Chipotle’s burrito bowls, but I made the mistake of looking at the calorie count one time and … wow!  They are so high in calories!  So I’ve been playing around with a Weight Watchers friendly version and I think the key is the rice.  One thing that sets Chipotle apart is their cilantro lime rice.  It’s really good!  Read on to find out how I make my Arizona Burrito Bowls!

Thanks to the flexibility of the Weight Watchers program, almost all of the ingredients in a burrito bowl can be little to zero points with a little tweaking (depending on your personal points).  So with a little imagination I came up with a zero point burrito bowl recipe!

The rice…

I’ve been a little obsessed with riced cauliflower.  You can see it in my Chicken Fried Rice and Chicken and Rice Soup recipes.  So to make the burrito bowls zero points I used riced cauliflower and dressed it up with cilantro and lime juice/zest.  I used about a half a bunch of finely chopped cilantro and then added the zest and the juice of one lime.  It definitely needed salt so I added salt and then tasted it and it was good!

The meat…

Again, in order to make it zero points I used 99% fat free ground turkey and to give it some pizazz I put a packet of taco seasoning in it.  You can also use a skinless grilled chicken breast in place of the turkey.

The fixins…

Now I have to confess, when I order a burrito bowl at Chipotle’s I have them slather on the cheese, sour cream and guacamole.  (Geez…no wonder I need Weight Watchers!)  But in order to make this recipe zero points I had to make some changes.  I used fat free plain greek yogurt in place of the sour cream.  Does it taste like sour cream?  No.  But it adds a creaminess to it that I liked.  I left off the cheese and guacamole to keep it zero points but there’s nothing wrong with adding a little cheese (Velveeta Shreds has alot less calories than cheddar) and maybe a mini Wholly Guacamole container, which is 100 calories.  You can also add some lettuce and pico de gallo for no extra points.

And I’m obsessed with these microwave bowls.  I heat my corn and beans in them…as well as everything else I eat!  They’re great as a veggie (or tamale!) steamer and you can freeze your leftovers in them.

Arizona Burrito Bowls
Servings: 4 servings
Ingredients
  • 16 oz 99% Fat Free Ground Turkey
  • 1 packet Taco Seasoning
  • 12 oz Riced Cauliflower I used Green Giant brand
  • 1/2 bunch Cilantro
  • 1 Lime
  • 1 can Black Beans, drained
  • 1 can Corn, drained
  • 1 cup Plain Fat Free Greek Yogurt
  • 1 cups Salsa
Instructions
  1. Cook ground turkey over medium heat in a shallow pan.  Add taco seasoning while it's cooking.

  2. Microwave riced cauliflower and place in a bowl.  Finely chop the cilantro and add to the cauliflower.  Zest and juice the lime and add to the cauliflower.  Add salt and pepper to taste and stir..  Give it a taste and add more salt as needed.

  3. Drain and heat the black beans and corn, either in the microwave or on the stove.  Personal choice...

  4. Place the rice, turkey, beans and corn in a bowl.  Add salsa and yogurt.

  5. Enjoy!

    See if you can find Lebne instead of Greek Yogurt. It is more like a our cream and has 0 sugar. Find it in Middle Eastern markets or Kosher markets. Two tablespoons are 60 calories…it is also great with fruit or savory as a spread with olives and olive oil.

      I tried this today and it was delicious. I opted for 1 tablespoon of sour cream because I had plenty of points for lunch but I read the ranch seasoning with Greek yogurt tipand I’m definately going to try it. Thank you so much!

          This is my 2nd time making this yummy recipe! I use fat free cheddar so I can have some scoops. But it’s so tasty you really don’t even need them! Thanks, I love it!

            Susan, have U tried ‘Green Mountain Greek Yoghurt’ ? It’s only Greek yoghurt that isn’t sour and it’s pleasant enough to eat without any additive.

          I made these tonight, I added some bell pepper and onion to my turkey and then made fresh salsa they were amazing!! My husband kept saying how good it was I finally confessed all the ingredients he was pleasantly suprised:))

      I’m reading about frozen corn vs canned corn. Unfortunately there is sugar added to most canned corn so check the ingredients to make sure it’s nothing but CORN. The added sugar changes the point value.

    Add a couple of tablespoons of dry ranch seasoning to your Greek yogurt. It gives it kind of a ranch flavor [like a ranch dip ~ add more or less tor your taste] but it still has 0 calories and 0 points. I’m not a big fan of Greek yogurt either, but I have come to find this is a great substitute to many things, ex mayo on sandwiches.

      Delicious! I made with leftover chicken and brown rice, instead of the ground turkey and rice cauliflower. Next time I’ll use less lime juice, but that is just my personal taste. This is the first recipe since I started WW and I loved it. Thank you!

    You need to use frozen corn vs canned for it to be zero points but this sounds amazing and I plan to make it over the weekend. 🙂

    I mix taco seasoning into the FF Greek yogurt for Mexican inspired dishes when I’m putting it on top, but use it plain instead of sour cream whenever it goes INTO a recipe. Thanks for a yummy, filling recipe!!

    This is not zero points on WW. I scanned all my ingredients and it added to 6 points. I used sour cream and not Greek yogurt (yuk). Tasty though.
