Arizona Cowboy Caviar

 

Guacamole is one of my favorite snacks.  I even have a recipe for it here!  I recently had a craving for guacamole but since I’m following the WW program I wanted to find another way to satisfy my craving.  Not that you can’t have guacamole on WW, but it’s pretty high in points…  The original Cowboy Caviar is a dish that has avocado in it, but it generally also includes black eyed peas and Italian dressing and that wasn’t working for me.  I wanted guacamole!  So I used the basics of my guacamole recipe and created Arizona Cowboy Caviar.  For you Weight Watchers followers, my recipe is 2 points on Blue and Purple, and 4 points on Green.

Here’s what you need…

  • 3 roma tomatoes
  • 2 avocados
  • 1 red onion
  • 1 jalapeno
  • 2 cloves garlic
  • 1 can of corn
  • 1 can of black beans
  • 1/2 bunch cilantro
  • 1 lime
  • salt and pepper

Here’s how you’ll make it…

  • Finely chop the tomatoes, jalapeno, avocado, cilantro and onion
  • Mince the garlic cloves
  • Drain and rinse the corn and black beans
  • Add all the ingredients to a large bowl
  • Squeeze the lime over the ingredients
  • Add salt and pepper to taste
  • Blend all ingredients together

I personally think it tastes better after it’s been marinating all together for awhile so I put mine in the refrigerator and serve it (well, most of it) later.  I usually can’t wait that long to have a little sample.

A few things I use for this recipe…

I love my lemon/lime press.  It’s metal but lightweight and it squeezes every drop out of the citrus!

I’m always looking for fun serving dishes and I love these “5 o’guac” and “just in queso” bowls!

How to eat your Arizona Cowboy Caviar…

With the tomatoes, corn and black beans making it a hearty dish, sometimes I just eat it like a salad but other times I need that salty crunch to go with it.  Corn chips are the obvious choice but again, not so WW friendly so I’ve discovered Sensible Portions Veggie Chips!  They are crunchy, salty and sturdy enough to hold a big scoop!  10 Sensible Portions chips are 3 points.

Arizona Cowboy Caviar
Servings: 12 servings
Ingredients
  • 3 Roma Tomatoes
  • 2 Avocados
  • 1 Red Onion
  • 1/2 bunch Cilantro
  • 1 Jalapeno
  • 2 Garlic Cloves
  • 1 can Corn
  • 1 can Black Beans
  • 1 Lime
  • Salt and Pepper
Instructions
  1. Finely chop the tomatoes, jalapeno, avocado, cilantro, and onion and add to a large bowl.

  2. Mince the garlic cloves.

  3. Drain and rinse the corn and black beans.

  4. Add the garlic, corn and black beans to the bowl and blend all ingredients.

  5. Squeeze the fresh lime into the bowl.

  6. Add salt and pepper to taste.

  7. Serve or refrigerate.
