Hello 2024! I came up with a WW Friendly Banana Bread recipe a few years ago and I still make it all the time. But I wanted something a little different this week so I came up with a WW Friendly Apple Muffins recipe! I tried a pumpkin version during the holidays and I didn’t like the texture. I’m not giving up, though. I’ll tweak a few things and when I get it to a place that I like, I’ll share it with you.
If you’re anything like me, you get reflective at the start of a new year. Health, dieting, exercise… But if you’re also like me, it falls off the rails a week later. 🙂 I have tried so many different diet programs, but all roads seem to lead back to Weight Watchers for me. So I entered the ingredients for this WW friendly apple muffins recipe into the WW app, and each muffin is only 1 point!
This recipe makes about 18 muffins. I found a convenient way to scoop the batter into the cupcake liner is with this 3 tbsp scoop. It makes it so easy and mess free!
Here’s what you’ll need:
- 1 Box Pillsbury Sugar Free Yellow cake mix
- 1 Gala apple or apple of your choice, grated
- 1 small container Motts Cinnamon Applesauce, No Sugar Added
- 1 tbsp Ground Cinnamon
- 1 12 oz Diet Dr Pepper
Here’s what you’ll do:
- Preheat the oven to 325 degrees
- Peel, core and grate the apple and set aside
- Add the cake mix, applesauce, ground cinnamon and Diet Dr Pepper to a bowl and beat with a hand mixer
- Fold in the apple until blended
- Scoop the batter into the cupcake liners
- Bake at 325 for 19-23 minutes.
And here’s what you get! Pretty darn tasty for 1 point!
Random Thoughts…
- I like to grate the apple because then you get the flavor of apple in every bite. You can dice them if you’d rather.
- You can also add more apples to the recipe. Just be careful of the moisture content.
- Pecans would be delicious in this recipe! If you choose to add a half cup of pecans, it will, of course add to the points but 2 points is still a really good snack!
