I hosted Christmas day at my house last year and I was looking for an alternative to the traditional pumpkin pie. I thought apple cobbler sounded good so I searched on Pinterest (as usual) to find an apple cobbler recipe and what I found was something even better….a Snickerdoodle Apple Cobbler! I love snickerdoodles, I love apple cobbler…this was the perfect marriage! — not that I would know much about that. 🙂
This recipe is from Krusteaz www.krusteaz.com and I decided to give it a try. It looked like a quick and simple recipe. So I made it as well as a caramel sauce and after dinner I warmed up the caramel sauce and poured it over the individual servings of the cobbler. Wow. It was incredible! Everybody went nuts over it. It has been requested by the family multiple times since then and it’s my pleasure to do so because it is SO EASY…but of course I don’t let on just how very easy it is! You can use premade caramel sauce from the store but I think what puts this recipe over the top is making a homemade caramel sauce. I’ll post the recipe for the one I used…
What makes this recipe so easy is that it uses a Krusteaz snickerdoodle cookie mix that you can find in the baking aisle of your local grocery store. To be honest I’d never used a Krusteaz baking mix before but after the success of this recipe I can’t wait to try other recipes using these gems!
By the way, I followed their recipe to the letter with one exception… It took more than 30-35 minutes to bake. It was more like just over 40 minutes.

- 1 pkg Krusteaz Snickerdoodle Cookie Mix
- 1/2 cup butter
- 1 egg
- 1 can apple pie filling
- 3 tbsp caramel topping (I prefer homemade)

Preheat oven to 375°F.

Mix together cookie mix, butter, and egg.

Spray an 8 x 8-inch pan with cooking spray and place half of the prepared cookie dough in small spoonfuls across the bottom.

Sprinkle half of the cinnamon sugar packet over the dough.

Top with apple pie filling.

Place remaining dough in spoonfuls on top of the apple pie filling.

Sprinkle with remaining cinnamon sugar.

Drizzle caramel on top.

Bake 35-40 minutes

Serve warm or cold with warm caramel drizzled on top of each serving
