I’ve mentioned before that my aunt Cecil was the best cook and baker I’ve ever known. Everything she made just looked effortless and was amazingly delicious. Earlier this year I was going through some of her recipe books and I found the recipe for these yummy bars she always seemed to have around. My brother and I had just recently talked about them so I was excited to find the recipe. She just called them Chewy Bars though others might call them Blondies. But I would never argue with her baking success, so today I share with you Cecil’s Chewy Bars.

Like most of Cecil’s recipes, these bars are super easy with simple ingredients you probably already have. Another thing I like about this recipe is that it’s the perfect vehicle for added ingredients. Though I love them just as they are, you could add things like butterscotch morsels, raisins, white chocolate…whatever you like to make the perfect chewy bar for your taste.
Here’s what you’ll need:
- 2 eggs
- 2 cups light brown sugar
- 1/2 cup salted butter
- 1 tsp vanilla
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup chopped pecans
Here’s how you’ll make it…
- Combine the flour, baking powder and salt in a bowl.
- Melt the 1/2 cup of butter.
- In a mixing bowl, mix together the eggs, brown sugar, butter and vanilla.
- Slowly add the flour mixture until blended.
- Add the chopped pecans and blend.
- Pour into a 9×13 pan, or an edge pan. (That’s my preferred pan for these…)
- Bake at 350 for 25-30 minutes.
What’s an edge pan?
Edge pans were created for the brownie lover who wants each brownie to have a nice crunchy edge to go with the chewy center. These chewy bars work perfectly for that same concept! It’s my favorite way to make my chewy bars. You can see below I use it for other things as well, like my banana bread.
Another thing my aunt always had was a small square metal spatula for cutting bars. A regular size spatula is too big and a pie server is an awkward shape for a square bar. One of the things I got when she passed away was her little spatula and I use it all the time.
