Homemade candy is often associated with the holidays, but sometimes it’s fun to surprise someone with a quick treat any time of year. This Butterscotch Cornflake Candy is one of the easiest recipes I have. I’ve been making it since I was a pre-teen, when I spent the afternoon with my mom’s best friend Rose. She showed me how to make several easy candies and cookies that day. I’ve been making this candy ever since and they’re my most requested candy at the holidays. Bonus, they’re also the easiest to make during the holiday rush!

Here’s what you’ll need…
There are just a few things you’ll need for this recipe.
I like to use a medium size microwavable bowl, like the one pictured here.
I typically use a cookie sheet or jelly roll pan for this recipe, but the last time I made them I tried a candy mold and I really like how they controlled the size of each piece of candy. They don’t really make the candy a nice, conformed circle…they just reign them in a little.
A candy mold can be a little frustrating to use because it can be a challenge to remove the candy, so what I do is just gently lay the candy in the mold, not pack it in there. Again, I’m just using it as size control. I’m not looking for it to shape into a circle.

Once you have all your supplies gathered, it’s time for the ingredients.
There are literally 3 ingredients in this recipe:
- 11 oz Butterscotch Chips (I use Nestle Toll House) — Note: Amazon has them for a really good price in the link.
- 1 cup Peanut Butter
- 5 cups cornflakes, or any flake cereal
That’s it! Biggest decision you have is to decide if you want smooth or chunky peanut butter.
Here’s what you’ll do…
- Add butterscotch chips and peanut butter to a medium, microwavable bowl
- Microwave for 2 minutes
- Microwave in additional 30 second increments until the chips are MOSTLY melted.
- Important note: It’s fairly easy to burn the butterscotch chips if you microwave them too long. You will know they’re burned if the consistency solidifies and they’re no longer creamy. I microwave for 2 minutes, then take them out and stir them. They’ll still be chunky, but you’ll see they’re melting. Stir them every 30 seconds. They’re ready to go when you still see a few chips not fully melted. The rest of them will melt as you stir. Usually 3-4 minutes total in the microwave.
- Add the cornflakes and stir until the cornflakes are coated
- Using 2 teaspoons, scoop a spoonful of mixture onto a cookie sheet or into a candy mold.
Note: See how large mine are. That’s fine, but like I mentioned, I kind of like them a bit smaller so a candy mold helps me control the size of them.
- Put the candy in the refrigerator until firm, about an hour.
- Once they’re firm, put them in a ziploc bag and keep in the refrigerator until needed.
That’s all there is to it! A quick, easy candy that will get rave reviews!
