cheesy zucchini

Cecil's Cheesy Zucchini

Servings 8 servings

Ingredients

  • 7 Large Zucchini
  • 3 Roma Tomatoes
  • 1 Sweet Onion
  • 2 tbsp Chicken Bouillon
  • 2 oz Cheddar or Colby Cheese

Instructions

  1. Slice zucchini in quarters lengthwise and slice into large chunks

  2. Dice onion and tomatoes

  3. Place half the zucchini, onion and tomatoes in a large saucepan

  4. Sprinkle a tbsp of chicken bouillon on top of the vegetables

  5. Add the rest of the vegetables to the saucepan

  6. Sprinkle the second tbsp of chicken bouillon over the top

  7. Give vegetables a quick toss.

  8. Cover and cook of medium low (setting of 4 on most electric stoves) - no water necessary in the pan

  9. After about 20 minutes, toss again and continue to cook with the lid on

  10. Bring to a boil and cook until onions are tender - about another 20 minutes

  11. Remove from heat and drain.

  12. Add grated cheese to the pan and cover . The heat from the pan and the veggies will melt the cheese.

  13. When the cheese is melted, serve!
