Slice zucchini in quarters lengthwise and slice into large chunks
Dice onion and tomatoes
Place half the zucchini, onion and tomatoes in a large saucepan
Sprinkle a tbsp of chicken bouillon on top of the vegetables
Add the rest of the vegetables to the saucepan
Sprinkle the second tbsp of chicken bouillon over the top
Give vegetables a quick toss.
Cover and cook of medium low (setting of 4 on most electric stoves) - no water necessary in the pan
After about 20 minutes, toss again and continue to cook with the lid on
Bring to a boil and cook until onions are tender - about another 20 minutes
Remove from heat and drain.
Add grated cheese to the pan and cover . The heat from the pan and the veggies will melt the cheese.
When the cheese is melted, serve!
