Cecil's Cheesy Zucchini

Ingredients

  • 7 Large Zucchini
  • 3 Roma Tomatoes
  • 1 Sweet Onion
  • 2 tbsp Chicken Bouillon
  • 2 oz Cheddar or Colby Cheese

Instructions

  • Slice zucchini in quarters lengthwise and slice into large chunks
  • Dice onion and tomatoes
  • Place half the zucchini, onion and tomatoes in a large saucepan
  • Sprinkle a tbsp of chicken bouillon on top of the vegetables
  • Add the rest of the vegetables to the saucepan
  • Sprinkle the second tbsp of chicken bouillon over the top
  • Give vegetables a quick toss.
  • Cover and cook of medium low (setting of 4 on most electric stoves) - no water necessary in the pan
  • After about 20 minutes, toss again and continue to cook with the lid on
  • Bring to a boil and cook until onions are tender - about another 20 minutes
  • Remove from heat and drain.
  • Add grated cheese to the pan and cover . The heat from the pan and the veggies will melt the cheese.
  • When the cheese is melted, serve!
