Porcupine Meatballs

Ingredients

  • 1 lb 99% Lean Ground Turkey
  • 1 Egg
  • 10 oz Frozen Riced Cauliflower
  • 1 tsp Onion Powder
  • 46 oz V8 Juice
  • Salt and Pepper to taste

Instructions

  1. Set out the frozen cauliflower to thaw a little while you're gathering your ingredients and setting up your slow cooker.

  2. Combine turkey, egg, salt/pepper, onion powder and riced cauliflower.

  3. Shape into about silver dollar sized meatballs.  (One lb makes about 20 meatballs).

  4. Put the meatballs into the slow cooker and cover with the V8.

  5. Place the lid on the slow cooker and cook on low for about 6 hours.

  6. Serve and enjoy!
