Butterscotch Cornflake Candy

Ingredients

  • 11 oz Butterscotch chips I use Nestle Toll House
  • 1 cup Peanut butter
  • 5 cups Cornflakes Any flake cereal will do

Instructions

  1. Add butterscotch chips and peanut butter to a medium, microwavable bowl

  2. Microwave for 2 minutes

  3. Microwave in additional 30 second increments until the chips are MOSTLY melted.

    Important note:  It's fairly easy to burn the butterscotch chips if you microwave them too long.  You will know they're burned if the consistency solidifies and they're no longer creamy.  I microwave for 2 minutes, then take them out and stir them.  They'll still be chunky, but you'll see they're melting. Stir them every 30 seconds.  They're ready to go when you still see a few chips not fully melted.  The rest of them will melt as you stir.  Usually 3-4 minutes total in the microwave.

  4. Add the cornflakes and stir until the cornflakes are coated

  5. Using 2 teaspoons, scoop a spoonful of mixture onto a cookie sheet or into a candy mold.

  6. Put the candy in the refrigerator until firm, about an hour.

  7. Once they're firm, put them in a ziploc bag and keep in the refrigerator until needed.
