Fresh Lemonade

 

I live in an area where lemon trees are very common and what’s an obvious thing to make with lemons?  Limoncello!  Uh, I mean Fresh Lemonade!  🙂   I’m fussy about my lemonade.  I think the ones saturated with sugar are just too sweet.  I thought I would try using Truvia and it turned out perfect!  It tames the tartness of the lemons without making it too sweet…and it’s zero points on the Weight Watchers Freestyle program!  For a low-cal alternative to traditional lemonade I’ve always been a fan of Crystal Light but honestly, I like this so much better.

My lemon tree journey…

When I bought my fixer upper, the landscape was in desperate need of some TLC.  The backyard sits on a little lake and I wanted it to feel lush and beautiful and let me tell you, it was not!  Since I was basically starting over on the landscape, I decided I wanted a lemon tree as part of the landscape and I’m so glad I have one now!

So now that I have all those lemons, I needed a way to store the juice for use throughout the year.

Lemons from my tree

I wasn’t about to juice all those lemons by hand so it was time to use some of my American Express points and order a citrus press!  I landed on a Breville Citrus Press and I love it!

My system…

After I pick all the lemons and rinse them off, I get out my trusty old 2 cup Pyrex measuring cup  and mesh strainer and a box of sandwich size baggies.

I place the measuring cup under the juice press and place the strainer on top of the cup to catch any pulp.

Once I reach two cups, I pour the lemon juice in a baggie and zip it up.

Then I freeze the baggie laying flat.

Once they’re frozen, they stack perfectly in the freezer!

Now anytime I want it, I can make Fresh Lemonade!  The recipe is so simple and makes 8 one cup servings:

  • 1 1/4 cup Fresh Lemon Juice
  • 6 3/4 cups Water
  • 1 cup Truvia

And if you want an adult version of Fresh Lemonade, add 6 oz of vodka — then give it a taste to see if you need to add more!  Or you can add some pureed strawberries to make it a strawberry lemonade.

Another thing I make with my fresh lemonade is this delicious no-bake cheesecake.

Fresh Lemonade
Servings: 8 Cups
Ingredients
  • 1 1/4 cup Fresh Lemon Juice
  • 6 3/4 cups Water
  • 1 cup Truvia
Instructions
  1. Mix lemon juice and water in large pitcher.

  2. Stir in Truvia and chill.
